The Original. Carrying on the taste since our founding, this is the authentic, fundamental Ippudo tonkotsu ramen. Featuring a silky tonkotsu broth, it is seasoned with a salt-based 'kaeshi' and lard. Topped with thin, crisp noodles, tender sous-vide loin chashu, and seasoned with salt koji. A gentle, simple bowl that allows you to fully enjoy the flavor of the tonkotsu broth.

The Innovation. A bowl featuring depth and richness, enjoyed by dissolving our signature aromatic garlic oil and special spicy miso into the broth. The base uses a soy sauce-based 'kaeshi' and back fat. Paired with medium-thin noodles that carry the aroma of wheat, and topped with tender, juicy, thick-cut pork belly chashu. If Shiromaru is the orthodox choice, Akamaru is the innovator that expanded the possibilities of tonkotsu ramen.

The Stimulus. Our smooth tonkotsu broth is combined with special spices to add heat and richness. Topped with spicy minced meat, mizuna, and white scallions for a delightful texture. You can choose your spice level between 'Regular' and 'Extra Spicy'. A stimulating tonkotsu ramen with a 'mala' heat that will have you breaking into a sweat.

[Plant-Based Akamaru: Ginza, Ginza Higashi, Harajuku Takeshita-dori, Asakusa Kaminarimon-dori, Shijo Karasuma, Kanazawa Korinbo limited / Plant-Based Shiromaru: Harajuku Takeshita-dori limited] Plant-based ramen that captures the flavors of our signature Akamaru and Shiromaru without using any animal products. The Plant-Based Akamaru features a rich soy milk broth deepened with aromatic oil and accented with spicy miso for a complex, harmonious flavor. The Plant-Based Shiromaru replicates the silky, fragrant original Shiromaru broth using only plant-based ingredients and truffle oil for a simple, satisfying taste. *This is a plant-based product.

[Asakusabashi Honpo limited] Genten recreates the original ramen recipe from Ippudo's founding. It features a silky tonkotsu broth boiled for 12 hours, paired with a blend of six Kyushu soy sauces. A must-try for any ramen fan. Akamaru recreates the original taste from 1996 when the Akamaru Shinaji was first born, featuring carefully prepared broth, pork back fat, spicy miso, and aromatic garlic oil for deep, rich layers of flavor.

[Daimyo Honten limited] A store-exclusive shoyu (soy sauce) ramen combining a clean pork broth with local 'Jokyu' soy sauce from Daimyo. Enjoy this modern take on the Chinese-style noodle soup that Ippudo has been serving since 1985—a rarity in Fukuoka at the time.

[Asakusabashi Honpo, Kameari limited] A revival of the shoyu ramen sold at our original Daimyo store. Features a clean broth combining pork bone broth with dried sardines, seasoned with several types of Kyushu soy sauce. Served with exclusive noodles made from Fukuoka-grown flour.

[Lumine Est Shinjuku limited] A three-layered soup resembling tonkotsu, made with soy milk, vegetable bouillon, and kelp dashi. Potatoes are added to the soy milk base for density, and porcini mushrooms provide a subtle, fragrant hidden flavor. The noodles are made from bread flour containing the wheat hull to stand up to the soup. A look at the future of ramen from Ippudo. *This is a plant-based product.

[Lumine Est Shinjuku limited] A broth made from porcini and shiitake mushrooms layered with vegetable bouillon, finished with a clean, light soy sauce tare. Topped with meticulously prepared vegetables and a hearty 'smoked ganmo' (tofu fritter). A special bowl packed with the essence of our craft. *This is a plant-based product.

[Limited locations] Seafood dashi is extracted carefully in-house to concentrate its flavor. Dissolve the side of yuzu kosho mid-meal for a refreshing kick. A new yet nostalgic bowl of Chinese-style noodles where rich soy sauce and seafood dashi harmonize.

[Horie limited] A slightly sweet yet sharp soy sauce flavor paired with the mellow mouthfeel of tonkotsu broth. Chewy, thick noodles complement the soup. Topped with chives and bean sprouts, inspired by Hakata motsunabe. Finished with garlic chips for added aroma. A 'Shoyu Tonkotsu' that is quintessentially Hakata, featuring sweet and dark soy sauce from Kyushu.

[Kawagoe Inter limited] Ippudo joins the 'Kawagoe Shoyu Ramen' project led by local ramen shops and soy sauce makers! This store-exclusive bowl features 'Hatsukari Shoyu' from the Matsumoto Soy Sauce Shop.

[Roppongi limited] A transparent tonkotsu broth made with soy sauce from a long-established store in Itoshima, Fukuoka, combined with domestic 'yaki-ago' (grilled flying fish) dashi. A hint of green chili adds a subtle kick. Topped with old-fashioned bamboo shoots and specially prepared smoked chashu. A bowl that offers both nostalgia and a unique layering of dashi flavors.

[Limited locations] Ippudo’s tonkotsu broth layered with our house-made 'Smoked Shoyu' and 'Fukuoka-produced Moromi Shoyu'. Chewy, medium-thin noodles capture the mellow broth and sharp soy sauce finish. The richness of chicken oil and back fat adds depth, and the juicy thick-cut chashu is irresistible.
