The base uses a soy sauce-based 'kaeshi' and back fat. Paired with medium-thin noodles that carry the aroma of wheat, and topped with tender, juicy, thick-cut pork belly chashu. If Shiromaru is the orthodox choice, Akamaru is the innovator that expanded the possibilities of tonkotsu ramen.
