Freshly made house-made noodles using 100% domestic Japanese wheat are boiled in a large cauldron and served directly in a wooden tub without being cooled in water. Udon that is not cooled has a chewy, soft texture like mochi. The dashi cling perfectly to its slightly textured surface.
