Mentaiko Kamatama Udon

This dish adds a topping of spicy pollack roe (mentaiko) to the classic Kamatama Udon (freshly boiled noodles mixed with raw egg). The rich flavor of the egg clinging to the noodles is enhanced by the deep, punchy taste of the mentaiko. Add dashi soy sauce to taste and enjoy.
